Marigold Bistro might appear unassuming from the outside, but step beyond the exterior, and you’ll find a tranquil atrium with a charming atmosphere, a soothing water feature, and the warm aroma of fresh, made-from-scratch meals. For owner Cassandra Cayson, the space represents more than just a restaurant—it’s a place of connection, comfort, and community.


“Whether it is a regular we see nearly every day or a first-time visitor, there’s always a special experience to share,” Cassandra says. That personal touch is part of what sets Marigold Bistro apart. During the day, the bistro offers hearty breakfasts and satisfying lunches, transforming after-hours into a full-service catering venue for private events, both on and off-site.


Cassandra is no stranger to the Sandpoint dining scene. After her previous restaurant, Forty-One South, closed in 2021, she turned her attention to event planning. But it wasn’t long before she found herself missing the day-to-day rhythm of restaurant life—and, more importantly, the relationships built through shared meals and familiar faces. When longtime friend Judy Colegrove decided to step away from Tango Café, Cassandra saw an opportunity.


“Things fell perfectly into place for me to transition back into the restaurant business. I liked that we could operate for our regular service throughout the day and still have the flexibility to do events,” she explains.


Marigold’s menu includes a variety of classic breakfast and lunch favorites made from scratch, showcasing the best of their cuisine. “Some customer favorites are the Reuben, Fish Tacos, Mediterranean Omelet, and Eggs Benedict (our Thursday morning special),” Cassandra shares. The culinary creativity doesn’t stop there—the bistro’s catering service offers fully customized menus based on each client’s preferences and budget.

While the flavors speak for themselves, the dining experience at Marigold is just as thoughtfully crafted. “Within the casual setting, we strive to provide friendly, professional service,” Cassandra says. The bistro also offers a comfortable conference room and event space for business groups—ideal for meetings, luncheons, and presentations.


The kitchen is led by Chef Ian Dillon, who brings years of experience and a familiar touch to the team. “In fact, Ian Dillon was our Sous Chef at Forty-One for many years,” Cassandra adds. Together, they recently hosted a romantic Valentine’s dinner featuring an upscale à la carte menu—an evening reminiscent of their earlier days in fine dining.

Marigold Bistro works closely with other local businesses, such as Wood’s Meats and Evans Brothers Coffee, and is eager to expand those partnerships. “We love using local ingredients and are looking forward to expanding our connections with local farmers,” Cassandra says.


As for the name, “Marigold” carries personal meaning and symbolism. “Marigolds are a companion flower, protecting other plants like tomatoes from garden pests while attracting the necessary pollinators. I loved that!” she says.
